Roast Turkey with Pork Sausage and Cambozola

BLEND No.50 CREATIVE RECIPE

I do appreciate those reliable, “tried and true” recipes, but I always yearn to create something new and different. I’m really not a fan of turkey, so whatever makes it tastier is good thing. I am always thinking about how I can infuse the meat with delicious flavors. Carefully stuffing a sausage mixture under the skin helps trap the moisture in the bird. Then thoroughly massaging my Blend No.50, after making small slits in the meat adds the perfect amount of savory deliciousness, resulting in the perfect Holiday turkey.


BLEND FLAVOR PROFILE
Black Pepper, Onion, Paprika, Chili, Turmeric, Thyme, Oregano, Marjoram, Lime, Rosemary, Sea Salt, Herbs & Spices

Serves 8 - 16

RECIPE INGREDIENTS

  1. 1pk      Blend No.50                            
  2. ¾C        Olive oil _More if needed for mixing the Blend         
  3. 1             Turkey _ 12 to14 Pounds_ Preferable Brined           
  4. 2C           Pork Sausage _ Casing removed crumbled
  5. 2C           Cambozola Cheese
  6. 4T           Olive Oil _For basting

KITCHEN ESSENTIALS

Roasting Pan
Glass Jar (Preferably with Screw Lid)

TIPS

  • For the best results mix entire package with oil for even flavor in every bite
  • You can also use this Blend for other poultry, any kind of meat, some seafood or sides
  • Add extra salt and pepper to your taste if desired

PREP

  1. Mix entire package of Blend No.50 and oil in mixing bowl, set aside
  2. Mix sausage and cheese in mixing bowl, set aside
  3. Place turkey on a baking tray, loosen skin over breast and thighs
  4. Gently push your fingers between the rib cage and breast meat creating a small crater
  5. Cut some slits in the legs and thighs meat
  6. Stuff some of the sausage mixture into the crater between the breast meat and rib cage, into legs and thigh slits and remainder in the main cavity
  7. Pour some of the Blend mixture all over without touching the meat
  8. Rub the mixture under and over skin with your hands
  9. Add more of the Blend mixture if needed for stronger flavor, optional
  10. Refrigerate overnight uncovered
  11. Refrigerate excess Blend mixture, if any, in a jar with lid closed for later use

COOK

  1. Preheat oven to 450˚F
  2. Bring turkey to room temperature
  3. Place turkey onto roasting pan, breast side down, insert an oven safe thermometer
  4. Transfer pan onto the middle rack of preheated oven, roast 15 minutes     
  5. Turn turkey with breast side up, roast 5 minutes
  6. Lower oven to 300˚F, roast 40 minutes or until skin all golden
  7. Cover with foil and roast for 40 minutes
  8. Cook until 5˚F dgree¹ below   your desired internal temperature is reached²
  9. Transfer turkey onto a serving platter, let it rest for few minutes before serving  

NOTES

  1. You should take the turkey out of the oven before your desired internal temperature is reached, because it continues to cook while resting  
  2. 165˚F= Recommended internal temperature
