Grilled Skirt Steak with Creamy Gorgonzola & Heirloom Tomatoes

BLEND No.10 CREATIVE RECIPE


I love the simple purity of steak prepared solely with my Blend No.10, served without a sauce. But there are times when you want to boost the natural umami found in grilled meats. For an extra celebratory preparation, the addition of a creamy blue cheese and roasted heirloom tomatoes are match made in culinary paradise. This is explosive flavor ecstasy.


BLEND FLAVOR PROFILE
Black Pepper, Coriander, Leek, Onion, Sumac, Parsley, Oregano, Thyme, Rosemary, Lime, Sea Salt, Herbs & Spices

Serves 6 – 8

RECIPE INGREDIENTS

  1. 1pk     Homeira Style Blend No.10
  2. ¾C      Olive Oil_ For mixing the Blend
  3. 2lb      Skirt Steak¹_ Remove membrane and extra fat                   
  4. ½C      Creamy Gorgonzola Cheese_ More if needed
  5.  4        Large Heirloom Multi Color Tomatoes_ Sliced_ Roasted
  6. 2t       Oregano
  7. 1t       Thyme
  8. 3T       Olive Oil, for Cooking

KITCHEN ESSENTIALS

13” X14” Baking Tray
Cast Iron Grilling Pan
Glass Jar, Preferably with screw lid

TIPS

  • For even flavor in every bite mix entire package with oil
  • Use Blend No.10 for any meat, poultry, meaty fish or as herbed oil
  • Add extra salt and pepper to your taste if desired

PREP

  1. Mix entire package of Blend No.10 with oil in a mixing bowl, set aside
  2. Place meat on a baking tray and refrigerate without cover for few hours _Optional
  3. Remove meat from refrigerator, prick them using a fork
  4. Pour some of the Blend mixture over steaks without touching the meat
  5. Rub the Blend mixture into meat well with your hands on both sides
  6. Add more of the Blend mixture if needed for stronger flavor, optional
  7. Cover steaks and refrigerate preferably a few hours until ready to cook
  8. Refrigerate excess Blend mixture, if any, in a jar with lid closed for later use
  9. Mix oregano and thyme, set aside

COOK

  1. Preheat Oven to 400˚F
  2. Bring steaks to room temperature
  3. Heat oil in grill pan over medium high heat
  4. Place steak pieces onto the grill pan, do not over crowed
  5. Sear for 4 minutes or until lightly charred², turn over and sear briefly,  about 2 minutes²
  6. Remove steaks from heat, let it rest for 1 minutes
  7. Top steaks with cheese and tomatoes and oregano mixture
  8. Transfer steaks into oven and cook for 2 minutes²
  9. Remove steaks from oven  5F below your desired internal temperature³
  10. Ttransfer steaks onto your cutting board, let them rest for few minutes
  11. Cut and serve with your choice of side    

     

NOTE:

¹Skirt Steak comes in large piece (s) with different thickness.  Cut it in manageable pieces based on the thickness for more even cooking
²Cooking time depends on thickness of steaks
³135F=Medium Rare      145F= Medium   150F=Medium Well
