Roast Turkey with Pork Sausage and Cambozola

RECIPE INGREDIENTS
- 1pk Blend No.50
- ¾C Olive oil _More if needed for mixing the Blend
- 1 Turkey _ 12 to14 Pounds_ Preferable Brined
- 2C Pork Sausage _ Casing removed crumbled
- 2C Cambozola Cheese
- 4T Olive Oil _For basting

TIPS
- For the best results mix entire package with oil for even flavor in every bite
- You can also use this Blend for other poultry, any kind of meat, some seafood or sides
- Add extra salt and pepper to your taste if desired
PREP
- Mix entire package of Blend No.50 and oil in mixing bowl, set aside
- Mix sausage and cheese in mixing bowl, set aside
- Place turkey on a baking tray, loosen skin over breast and thighs
- Gently push your fingers between the rib cage and breast meat creating a small crater
- Cut some slits in the legs and thighs meat
- Stuff some of the sausage mixture into the crater between the breast meat and rib cage, into legs and thigh slits and remainder in the main cavity
- Pour some of the Blend mixture all over without touching the meat
- Rub the mixture under and over skin with your hands
- Add more of the Blend mixture if needed for stronger flavor, optional
- Refrigerate overnight uncovered
- Refrigerate excess Blend mixture, if any, in a jar with lid closed for later use
COOK
- Preheat oven to 450˚F
- Bring turkey to room temperature
- Place turkey onto roasting pan, breast side down, insert an oven safe thermometer
- Transfer pan onto the middle rack of preheated oven, roast 15 minutes
- Turn turkey with breast side up, roast 5 minutes
- Lower oven to 300˚F, roast 40 minutes or until skin all golden
- Cover with foil and roast for 40 minutes
- Cook until 5˚F dgree¹ below your desired internal temperature is reached²
- Transfer turkey onto a serving platter, let it rest for few minutes before serving
NOTES
- You should take the turkey out of the oven before your desired internal temperature is reached, because it continues to cook while resting
- 165˚F= Recommended internal temperature
