Lentil Bacon Soup
INGREDIENTS
Soup
- 1C Onion_Chopped
- 3T Olive Oil
- 1T Curry Powder
- ¼ tCumin
- 2C Lentil Cooked_Store Bought
- 3C Chicken Broth
- 1C Bacon_Cooked_Chopped
- D Pepper_Freshly Ground
- D Sea Salt to taste
Topping
- ½ C Bacon_Crisped_Chopped
- ½ C Fennel Fronds
- 2T Olive Oil
- ½ C Edible Flowers_Optional
- ½ C Micro Greens_Optional
- 1C Strained Yogurt_Optional
DIRECTIONS
Soup
- Heat oil in a medium size pot
- Add onion, sauté for 3 minutes
- Add curry and cumin, sauté more, until golden and aromatic
- Add lentils, salt and pepper
- Add chicken broth and simmer for 20 minutes
- Add bacon and stir to mix
- Turn off stove, let it sit for 5 minutes
- Blend mixture in the pot with a hand blender
- Do not over blend
- Check the taste to your liking
PLATING
- Pour soup into dishes dividing it into 4 to 6 portions
- Top it with some bacon chips
- Drizzle oil
- Top with some fronds
- Top with yogurt, greens and flowers, optional, serve immediately
