The fresh, snap and crunch of the cucumber paired with the sliced onions, tomato and zing from the lemon and champagne vinegar hits the spot for a fresh side dish.

RECIPE INGREDIENTS

1. 1T     HomeiraStyle Blend No.75, Already mixed with olive oil, (see Original Signature Recipe)
2. 1C    Persian Cucumber, Julienned
3. 1C    Onion, Cut into Rings
4. 3T     Shallots, Cut into Rings
5. 1C     Heirloom Cherry Tomatoes, Halved
6. 3T     Capers, Coarsely Chopped
7. ¼C    Fresh Dill, Tips Only  
8. ¼C    Champagne Vinegar
9. 1T     Lemon Zest
10. 2T     Lemon Juice, Freshly squeezed
11. 2T     Olive Oil
12. D      Sea Salt and Pepper, Freshly Ground

• Mixing Bowl

 DIRECTION

1. In mixing bowl, add cucumber, onion, shallot, tomatoes, caper, and dill, toss to mix
2. In a separate small mixing bowl, add Blend No.75, vinegar, lemon zest and juice, mix well
3. Add oil, salt and pepper to the vinegar mixture, whisk well
4. Pour Vinegar mixture over cucumber mixture and toss to mix, serve immediately or reserve for later.
