It is good that my family, particularly my husband, loves dessert, otherwise, I would never create any sweets. The most flattering moment for me is to watch them close their eyes with delight as they indulge their senses with the sweet I created. This incredibly easy dessert is worth the effort for the pleasure on the palate from creamy, tart filling, the silky whipped cream to the crunch of the graham cracker crust.

Serves 6

RECIPE INGREDIENTS

Crust

  1. 3C          Graham Crackers, Crumbled
  2. 6T          Butter, Melted, More if needed

Filling

  1. 1½C       Sweetened Condensed Milk
  2. ½C         Sour Cream                           
  3. 2T          Lime Zest
  4. 1C          Key Lime Juice

Topping & Garnish

  1. 2C         Whipped Cream, Placed in Piping Bag
  2.               Lime Rind, Julienned, Optional
  3.               Strawberries, Optional
  4.               Mint, Optional

DIRECTIONS

Crust

  1. Place crumbled crackers in a food processor and pulse into coarse texture
  2. Add melted butter and mix well
  3. Transfer cracker mixture onto greased pan, pressing it down and on to the sides evenly, refrigerate for few hours

Filling

  1. Preheat oven to 350˚F
  2. In mixing bowl, add condensed milk, sour cream, lime juice and zest, mix well
  3. Pour mixture onto graham cracker crust
  4. Bake for 5 to 7 minutes, or until bubbles appear, do not over bake
  5. Cool to room temperature and then refrigerate for several hours or overnight

Topping & Garnish

  1. When chilled, pipe the whipped cream in a decorative fashion
  2. Garnish with lime rinds, strawberries and mint
  3. Serve immediately
