BLEND's No.20 & No.75 CREATIVE RECIPE

This Middle Eastern Frittata/Omelet is herby and not eggy. Easy to make and delicious to eat. My Blends No.20 and No.75 make this simple elegant appetizer hard to resist. You can use any kind of greens you have available. Presenting them as mini wraps with some crunchy greens and roots will give you the perfect balance of texture. The best part is that these can be prepared in advance and served cold or at room temperature.

No.75 BLEND FLAVOR PROFILE
Dill, Parsley, Leek, Basil, Salt, Pepper, Herbs & Spices

RECIPE INGREDIENTS

Frittata

  1. 3T        Olive Oil, preferably Ghee
  2. ¼C       Onion, Finely Chopped
  3. ½C       Scallions, Finely Chopped
  4. 1T        Shallots, Finely Chopped
  5. 1pk     HomeiraStyle Blend No.20
  6. ¼C       HomeiraStyle Blend No.75, Already mixed with olive oil (see Original Signature Recipe)
  7. 4           Eggs, Whole
  8. 2           Eggs, White Only
  9. 2t         Lemon Zest
  10.   2T          Lemon Juic , Freshly squeezed
  11.   2C         Spinach , Finely Chopped
  12.   1C         Lettuce, Finely Chopped
  13.   2C         Cilantro, Finely Chopped
  14.   1C         Parsley, Finely Chopped
  15.   ½C         Dill, Finely Chopped
  16.   ½C         Sliced Almonds, Toasted 
  17.   2T         Olive Oil, preferably Ghee

Cigars

  1. ½C       Strained Yogurt
  2. 2T        HomeiraStyle Blend No.75 Already mixed with olive oil (see Original Signature Recipe)
  3. 1          Thin Lavash, Cut in 4½" - 5" inch squares
  4. 3          Persian Cucumbers, Julienned
  5. 3          Carrots, Peeled, Julienned
  6. 2C        Cherry Tomatoes, Roasted

 

KITCHEN ESSENTIALS

  • 11” Non-Stick pan


DIRECTION

  1. Preheat oven to 350˚F
  2. Heat oil in pan over medium heat
  3. Sauté onion, until translucent
  4. Add scallion and shallots, cook for 1 minutes, or until aromatic, remove from heat
  5. In a mixing bowl, whisk eggs, Blend No.20, Blend No.75 mixture, lemon zest and juice
  6. Add onion mixture, spinach, lettuce, cilantro, parsley, dill and almonds
  7. Heat oil or ghee in pan over medium heat
  8. Add egg mixture to pan and shake gently to distribute evenly
  9. Cover and cook until bottom releases from pan, 6-8 minutes
  10. Transfer to oven and cook for 40-45 minutes or until done.
  11.  Remove from oven and allow to cool before cutting in pieces

ASSEMBLING CIGARS

  1. Mix yogurt and Blend No.75 in a mixing bowl, set aside
  2. Place a few pieces of julienned cucumber and carrot on each piece of Lavash
  3. Top with a piece of Frittata
  4. Top with a dollop of yogurt mixture
  5. Top with a roasted cherry tomato
  6. Wrap the Lavash around the filling and serve
