BLEND No.21 CREATIVE RECIPE

If you are obsessed with total dining experiences then you will understand that planning menu and tablescaping go hand in hand for me. How fun this recipe for my Winter White Soup to go with your "winter white" tablescape. If you know anything about me, you know that simplicity and elgance go hand-in-hand, this recipe is a masterpiece that will impress but the preparation doesn't require a "top chef" to prepare. Don't tell, that's our secret!

BLEND FLAVOR PROFILE
Black Pepper, Curry, Turmeric, Cinnamon, Sumac, Cumin, Thyme, Lime, Sea Salt, Parsley, Herbs & Spices

Serves 6 - 8

RECIPE INGREDIENTS

  1. 1lb      Butter Potatoes
  2. D        Sea Salt, For Boiling
  3. D        Sea Salt and Pepper Freshly Ground
  4. 2         Leeks, White and Pale Green Parts Only
  5. ¼C      Onion, Finely Chopped
  6. 2T       Shallots
  7. 1t        Blend No.21
  8. 1t        Blend No.75, Already mixed with olive oil, (see Original Signature Recipe)
  9. 2T       Olive Oil
  10. 3C       Whole Milk
  11. 5         Thyme Sprigs
  12. D        Sea Salt
  13. 2lb      Halibut
  14. 1lb      Scallops
  15. ¼C      Pomegranate, For Garnish, Optional
  16. ¼C      Pistachios
  17.            Mint Tips, For Garnish, Optional                 

KITCHEN ESSENTIALS

    •  Medium Size 3” Deep Pan
    • Hand Immersion Blender

       DIRECTION

      1. In pot, add potatoes, cold water to cover them and salt
      2. Cook for 12-15 minutes, drain and set aside to cool down
      3. Heat oil in the same pot
      4. Add leek, onion, shallots and sauté until translucent, stir in Blends No.21 and No.75
      5. Add milk, thyme, salt, bring to a simmer over medium heat, cook 6-8 minutes
      6. Lower heat and add halibut and scallops to poach
      7. Meanwhile, cut potatoes into slices and sauté to golden with salt and pepper
      8. Using a hand blender, blend the fish mixture in the pan, do not over blend
      9. Divide soup in individual bowls, add potato slices
      10. Garnish with pomegranate, pistachios, mint and serve immediately!
