Serves 8
INGREDIENTS
5 Corn Tortillas – Sliced into 6 wedges - Fried
Sea Salt
2C Sharp Cheddar Cheese – Shredded
2C Monterey Jack Cheese – Shredded
1C Goat Cheese – Crumbled
3 Ears of Corn – Grilled – Kernels removed
½ C Onion – Chopped
1T Olive Oil
1ca Black Bean – Liquid Drained
1C Cherry Tomatoes - Roasted
5 Italian Pork Sausages – Taken out of Casing
8 Bacon Strips – Roasted – Julienned
2T Fresh Oregano – Julienned
1C Pickled Jalapeno – Seeds Removed
1C Cilantro – Chopped
1C Micro Greens
2T Olive Oil
Edible Flowers – Optional
Guacamole – Separate Recipe or Store bought
Tomato Salsa – Separate Recipe or Store bought
DIRECTIONS
In a medium pan, sauté onion in oil – 3 minutes
Add black beans and sauté for 2 minutes – Set aside
In a medium pan, sauté sausage – breaking into small pieces
Assembly
Preheat oven to 400 F
In an 13” round flat skillet – arrange one layer of tortilla chips
Top with cheddar cheese and Monterey cheese
Top with some of the oregano
Top with some of the beans and corn
Top with some of the sausage and bacon
Arrange another layer of chips and repeat the same
Place the skillet in the oven – 5 minutes, or until cheese melted
Add goat cheese, jalapeno, cilantro and micro green
Drizzle with olive oil and edible flowers
Serve in the same container
